Tom's book is, as one would expect, quite wonderful and informative. Several (not all) of the routines presented in that book involve the performer spreading the cards in front of a spectator and asking them to think of one, along the lines of the video posted by FurmanMatt.
The first time I ever saw it done this way was at a Garett Thomas lecture many years ago. In appearance, it is the same as FurmanMatt's video (though without the kicker ending). In my routines where I ask someone to think of a card, I prefer it to be a mental selection that is totally free, with the cards out of my hands, and preferably with my back turned. If those types of conditions appeal to you, you might enjoy some of my offerings in this area. Here's an example (although this one is fairly old compared to my more recent work): https://youtu.be/6Q7xUyy1HD0

Mike Power's INVISIBLE 21 would fit the criteria depending on how you "think a card" ie choice is shuffled prior to selection and mixed by the spectator. Magi deals the packet face-up and knows the card's location ahead of time! *You don't have to play it as 21 Card Trick, but you can, and you can end it in .5 phases as opposed to standard 3. Did I mention the selection is crazy fair?
Get his Penguin lecture! Also included is his experience w/ Marlo and his adaptation "Heisting Histed Heisted 2.0"! What a value! ~D
It's not their senses that mislead, it's their assumptions.

The new effect 23 allows your spectator to freely cut off a big group of cards, shuffle them, think of one, never name it, remove it, point to it or tell anyone else and yet when they turn over the one red backed card on the table at the end of the trick, it is the one they are thinking of (Never, ever named!) I got mine at Magic Live but they were also available at Genii Convention. I do not know of another card effect where the spectator NEVER names his thought of card (no fishing, no forcing, no pumping, etc.)
