Is there a trick for both hands, that would emphasize being ambidextrous in any way?

Off the top of my head (there goes another hair) I can't think of a trick, per se, but flourishes, manipulation effects (ala McBride), and juggling would seem to satisfy your question.

Not directly linked to the question, but does anyone find that they find some sleights easier with their 'wrong hand'?
I am wholly right handed, but still find myself naturally using the other hand for some moves, including shuffles, dealer and biddle grips and DL's, amongst others.
Probably a function of the fact that many of my earliest 'moves' as a kid were self-developed based on a word of mouth understanding of sleights rather than from textbooks.
Going back to the books more recently, I tend to find it difficult to master moves when my natural instinct is still for the right hand to grab the deck even though the left hand can't easily do the hard work.
Am still trying to remedy this.
Rambling post... sorry about that.

Being a lefty myself, it sure is annoying when I have to switch hands to fan out the cards. 
What good is a night, when you can't break it.

I don't remember anything either...I think, as blindbo said, it is more about flourishes. Maybe some more "extreme" stuff, but I am just guessing...

Yes I do, I do a lot of tricks with my left hand even though I am right handed.
I also find that I do more with my left nowadays.

I would suggest 'Instant Replay' by Paul Harris. [Which originated by Bill Kalush] although it will take a long time to perfect.
