Although it's not cards, Bob Sheets has a great shell and pea routine where the spectators can "guess"; but Bob's patter actually prevents "interjecting". He also pretends he's betting by saying "we're just playin' for love". It's so disarmingly charming that a spectator would only guess if he were directly asked. And as with monte, you can then control the outcome. The spec needs to know that this is not a real gambling routine, but a magic routine; and so I agree with furmanmatt that you don't just let the spectator guess, UNLESS you're controlling that guess!
