I think the number one criteria for selecting tricks is not wether the trick is hard to do or easy to do but that it is a good effect.
Just my 2 cents

There is a classic British book that I think is not very obtainable in North America. It is called Card Tricks Without Skill by Paul Clive. I knew Paul
but ironically he couldn't do a single trick in his own book! One layman I knew also knew Paul. His name was Joe Smith. He said to me, "I don't understand that book. I have known Paul for over 30 years and I have never known him to do a card trick in his life!"
I found out that Paul simply ran around with a notebook asking various magicians to contribute an easy card trick. He then wrote one of the classic books of all time on card tricks without sleight of hand. But he couldn't actually do any of the tricks he wrote about! I always found that very ironic.

Chech out Wayne Dobson's more recent books.

I'm surprised no one has mentioned Mick Ayres' Act Series. These are entire scripted acts that one can use as is, or you can extrapolate any of the effects within to use by themselves.
There are currently 4 in the series and I think the most difficult sleight within any of them is a p***y b****k.
100% Presentation.

Aldo Colombini has many small books that would fit the bill. See his web site.

Lots of great books to choose from. If I had to choose my three favorites, they would probably have to be:
"The World's Best Collection of Easy-To-Do Impromtu Card Magic" by Aldo Colombini
"Simple, Baffling Card Tricks --- Stunners That They can't Explain" by Leo Behnke
"Scarne on Card Tricks" by John Scarne
