If I recall, and I could balducci it and look it up, the red indicates it is from India I believe...

Okay, I balduccied and found that the red dye was used on imported (into the US) pistachios because there method of packing etc left blemishes and the dye covered it up. Since almost 100% of pistachios are grown in California the red is going away. I've not seen 'em in a long time.

Probably the same reason the jello pistachio pudding is green - it just is.

I had some pistachio ice cream last night and it was green and yummy! When I go in there again I'll ask the owner, who makes the ice cream, why it is green.
