I was watching an old Derren Brown special the other night (sorry DB again I know)and he played paper scissors stone with the public and was able to win repeatedly. I have done a search and there are a few threads on this topic and a few people state that it is a psychological effect that only works 80% of the time. Are there actually any published methods of this (not the simon aronson effect using props)or is this a derren exclusive?

If something seems too good to be true, it mostly is.
I don't think you watched the clip very much. If you notice, the spectator always calls out what Derren had in the previous game. If Derren had paper, the next time the spec would have paper. This happens about 14 times (if memory serves)in a row. I think you can draw your own conclusions from this.
