Or a Coke and tilt the glass, the foam and fiz doesn't ovwerwhelm the glass...how come?

It's not getting 'gassed up' as the gentler action does not aereate the beer/coke.

Yep, doesn't let air back into the product.
Same thing is done when bottling honey, keeps the air out for a nice pretty product. (learned that workin' the Ren Fair) Brett.

Also in regards to carbonated head - if you dip your finger into it - it depresses much quicker?
Why is that? is it the oil on your finger?

I think its just because you are introducing a dry object.
For example... If you touch a soap bubble with your finger (dry) it will pop, but if you've got the soap on your finger and you touch the bubble, it won't pop. B.
