I would love to hear what kind of material you perform where several spectators participate in one effect, something either highly visual or simple in plot that can be performed on the street in chaotic type environments. Something like Tossed Out Deck would not work in the area I have in mind. Any thoughts are very appreciated, thanks everyone!

3 shell game. .4 rounds with a different person each round so 1 doesn't look stupid or picked on.

You can involve multiple people with The Chicago opener. Have a first person select a card, have another person lock the different colored card in their hands and then have a third person select the second card.
ALso, with some imagination you can even have multiple people involved with an invisible deck: have one person name red or black, then another can name the suit, then another names numbers or court cards and then the last person chooses the actual card. |

A C/S transpo can happen in the hand of two spectators. Also several effects where two people hold the ends of a rope/cord/stick
I have performed with two people holding a tray used as a table with various types of engagement. Specific favorites are "Falcon Eye," "UnTouched," "Triple Flow," and "Radial Pendulum." The last is a pendulum controlled by 2, 3, or 4 people with many applications. I have never published "Triple Flow" that entails three different object held by three people that change places at the choice of the spectators, i.e. each starts with one object/coin and wind up with another they they wish for. All four have the performer far away from the action when the magic occurs.
