I was wondering which of the 3 main street games would be best to start out in for a beginner. 3 card monte, 3 shell game or Fast and Loose. Is there any one which is easier to pick up and learn or are they all pretty demanding? Also on Fast and Loose, what exactly is the game? Thanks

Do you want to perform these as a magician or do you want to busk with them?
Fast and loose is basically this. You make a figure 8 with a long loop of bead chain. You demonstrate that one of the loops of the 8 will trap the finger (fast), the other one will not (loose). The mark is supposed to find the one that catches the finger. It is explained in great detail on p. 86 ff. of The Art of Close-up Magic V.1.

Fast and loose is the less technically demanding, but hardest to sell performance wise as it is not as easily recognized by the masses.

Performing street cons at fairs can be a very risky business, unless you make it very clear from the outset that you are not trying to win money illegally. There have been a couple of threads about this in the "Sidewalk Shuffle" section. You might want to check this out.
Harry Anderson used to perform Three Card Monte on the Drag in Austin. He actually had a policeman watching him when he did it. He would close with something like "You realize that if I were allowing you to gamble, I could have taken all of your money. So please, if you have enjoyed this, dig deep and donate to me."
