Allright here we go;

One day the amatuer ornithologist saw a very unexpected bird. Shortly after that, he was dead.

He saw an eagle that came down and used its talon on his neck?

He saw big-bird who proceeded to trample him WWF style?

He saw a bird that was way out of place from its natural region due to a very intense hurricane that dragged the bird with it, and the hurricane killed him shortly after?

He was skydiving, and was so astonished by seeing a rare bird on the way down he forgot to pull his cord and died?

He was a proffesional pilot, and while he was flying he saw a rare bird that was well above their normal flight altitude, and promptly smashed into the plane's front windows or the engine causing a crash.

The bird had SARS or something?

It was a parrot that said "I'm very Unexpecting" and then shot him?

It sounds like it could be the skydiving one that Daegs offered

I should give the answer because Ol' Daegs really did nail it.

My answer was going to be; The man was a passenger on an airplane, he saw a bird get sucked into the engine at 20,000 feet and the plane crashed.

Basically what Daegs said in his 5th guess.

Good Work!!!
