2-4-2 Deal by Richard Vollmer always gets my vote as the spectator gets completely free choices as to what cards make up their hand and yet the performer will always win.
Power Of Poker by Bannon is also good as is Sal Piacente's handling of Nick Trosts High Card Poker Deal |

I like "The Three Jacks Deal" with a full house for the spectator and the gambler ending up with a royal flush. completely selfworking out of Karl Fulves books.
