"I know how you did it" is a staple at all kid shows. So the retort is "I know how I did it too!" Or, "I know how I do all of my tricks!" What can they possibly say to that?
When I was starting out in magic I thought that people said this because either I goofed up the trick, it was easy to figure out (and therefore not a good trick) or they were correct. None of this normally is true. Generally people say these things because either they have no tact, need to say something because their egos won't allow them to be "fooled," or they simply want attention. By understanding why people say these things, we can choose not to get upset or self conscious and react poorly. Because sometimes people say these things just to get a rise out of you! If you give them what they want, i.e. negative attention, you will fuel the fire. So just laugh it off and move on.

Great post. Understanding "why?" is the first step of the solution. Next minimizing these causes through creative routining, is the second step. Magic by it's nature is challenging, so we must soften the sting with our presentations.

I don't think that Color Monte has to be presented as "real magic." It's is based on a game of chance that is manipulated by a skillful street con artist. Most people present this is showing the spectator howthey (the magician) was conned by someone. You could therefore present this as a replication of the skill they used, so, "I know how you did it" doesn't matter too much in this case.

Anyway, most people are way off when they tell you that they know how they did something...

I do not get "i know how you did" that anymore. its all a matter of control. usually when a spectator says that they are threatened. solution? don't make them feel threatened its not about how technically skilled you are in this case and not about the presentation of the trick its how you as a performer relate to the audience. even if you are not technically skilled if your audience likes you they won't say anything. now there are exceptions I am not saying noone will ever say it, but they will defintely think more about saying it to someone they like and can relate to.

I have shown my hands front and back after doing the trick and then as the "How did you do that?" lines came up I put my hands into my pockets. Some guy swears he saw me palm off the other Red Diamond.
-A single death is a tragedy, a million deaths is a statistic.
-It is easier to fight for one's principles than to live up to them.
-The secret impresses no one. The trick you use it for is everything.

See you space cowboy...
