I have a few projects in the works and was wondering about powder-coating. One of them uses 2" diameter metal pipe. Will it matter what type of metal I use to be powder coated? I was curious about what can and can't be used (such as galvanized or aluminum... you know.. things like that!). This same pipe will be machined so one can nest into the other (sort of like a tent pole).

Any advice would be greatly welcomed!

I have powder-coated both stell and aluminum many, many times. I cannot speak for galvanized or stainless, etc. But why would you be using those types of materials?

You mentioned nesting pieces into another. Do remember however that powder-coating is a rather "thick" coating. Much thicker than standard paint, especially when it has texture like the crinkle coating. Nesting can often be difficult or impossible unless considerations are made for the extra thickness of the coating.

Just to second videoman's warning: I used to work on cars and motorcycles, and not only does the coating add thickness, but powder coated parts often needed to be re-drilled to accomodate bolts or screws.
