They have a large version of this in Quarks Bar at the Star Trek Experience inside the Las Vegas Hilton in Las Vegas. If you get a chnace go check it out, when they fill the drink it looks like the fluid is flowing up out of the glass. But, it is really filling it up.

That is VERY cool. I can totally see how something like that could be merged with a magical principle of illusion to create a really startling effect. One thing that comes to mind would be a levitation or suspension. The watre can be controlled to flow upwards to bring the person up and downwards to bring them backdown etc.
