I am enjoying a good cheese platter here while working so I gotta ask. Who loves blue cheese? Come on guys, lets hear them praises!
And in case someone hasnt tried it, put some blue cheese on a gingerbread and enjoy. that's what I am having now (and yeah, just crackers for the other cheeses)

Here in Europe there are dozens of different "blues".
I love them all. But...gingerbread? I'll trust you and try it, but I'm not really looking forward to it. |

Yeah, here in Europe we really do (I am kinda close to Germany).
The gingerbread sounded weird to me as well. Then I tried it. And every Christmas our cheese platters have gingerbread snaps on the side.

Considered the finest cheese on the West Coast of the US by many aficionados.

I have heard about it many many times, never had any. Its on my "must taste" list.
Actually Finnish (I am from Finland) cheeses are available in the US as well. Finlandia Cheese (www.finlandiacheese.com) used to sell our most sold blue cheese Aura under the name Midnight Blue, but now that I checked their site, its not listed under their products any more. Too bad as the 12 weeks aged cheese is amazingly delicious (on gingerbread or off).

Try mixing 1/3 Cream Cheese with 2/3 Blue Cheese...mash together well, and spread on pieces of celery, then sprinkle with paprika. Makes a wonderful appetizer especially when accompanied by a Bloody Mary.

Kcg5,
Usually it can be found at Whole Foods. I found it at the Market Hall in Rockridge. |

And I wave my hands and say the magic word "Gorgonzola!"
And blue-cheese-burgers start dancing around as a beautiful wheel of the stuff appears from my refrigerator! The crowd goes wild! |

I did a lot of Humbolt Fog back in the day! Oh, not THAT Humbolt?
YEAH, I digs da Blue cheese on crackers, sour dough baguettes, burgers, steak, salad (Italian dressing w/ crumpled blue)! Chili's restaurant had a Chopolte(sp?) and Blue burger that was mighty fine but has been taken off the menu as of late, BUMMER! The Basque restaurants around here offer blue cheese to cleanse the palette between courses! I loves it and the funkier the better! |

BEHOLD, the power of Cheese! Wasn't that the greatest ad slogan ever? I love gourmet cheeses, but just can't get into bleu. Never could. I do love a great smokey gouda, swisses and my favorite, a great Vermont cheddar. Last year in Vegas, I ate at Wolfgang Puck's and had a $20 cheeseburger (Kobe' beef) that had this amazing Vermont cheddar that was probably the best thing I've ever tasted.

Mix to a smooth(ish) paste and add 1 clove of garlic (use garlic press obviously), some ground black pepper and a few tablespoons of fresh chopped parsley. Store in a sealed container in the fridge.
