I don't know beans about Chili, but I am a vegetarian so I go for the beans and no meat. If you don't like it, make your own!

I attended a Super Bowl party a couple years ago and they served bar none the BEST chili I've ever eaten! The chef wouldn't tip all the ingredients or the method but said that it takes her 3 days of prep and cook time and the meat used was buffalo!
I'm sure the meat added a certain something to the flavor but I honestly think it would have been pretty awesome meatless as well! |

As long time Chili lover and Chili Cook[a few awards]....from what I understand 'No Beans is just a Texas thing'. I always added black beans only[preferrably Goya].
My Chili is not tomato sauce red,but rather a much darker and richer color due to the black beans and minimal use of tomato sauce.Beef broth and blackstrap molasses are two of my major ingredients.That is all I will say. |

Funny that beer should be mentioned just before the recipe swap request- because my chili uses a bottle of Guinness as one of the secret ingredients. The other one's 99% pure bitter chocolate. Why did I just give away the ingredients? Because I'm not going to share the proportions! At any rate, here's my recipe:
Drunken Dragon Chili- 3 lbs beef, cubed 1 yellow onion, diced 4-6 cloves of garlic, smashed 1/4 cup chili powder 1 tbsp cayenne powder 2 tsp cumin 1 bottle of Guinness ??? bitter chocolate 1 red bell pepper 1 yellow bell pepper hand and a half-full of fresh, chopped jalapeno and Serrano peppers 1 bay leaf black pepper to taste Brown beef (I usually use chuck roast, since it's inexpensive), onions, and garlic. Toss everything into a crock pot, cover, and cook on low overnight, stirring occasionally. In the morning, take off the cover and kick it up to high for a few hours to boil off some excess liquid. This also helps the seeds in the peppers (you left those in, right?) to release the capsaicin and give it kick. It's almost a 6-alarm chili. My wife convinced me to leave out the habanero pepper; probably a good call. You'll also notice- no beans.
