Celery is one of the "holy trinity" in cajun cooking. The other two being bell peppers and green onions.

Celery is useful along with carrot and onion as the basis of a ragu for having with pasta...so maybe they can develop a green carrot and an orange onion that also have less taste to go along with the celery. A bowlful of blue pasta, mix together, and away we go.

My favorite celery-based appetizer- celery filled with cream cheese, topped with anchovies.

Unfortunately, my wife hates celery, and only uses it in cooking.
