There are two coin star displays, both of which use 5 coins. One, I believe, taught on a popular series of video tapes (and sort of taught by Vernon) is the Manuel style coin star. It uses both hands to accomplish and one can use jumbos if so desired. The other type of coin star is the Down's style. It is performed with one hand, and usually follows a rolldown.

To answer the original query that began this thread: I'm not sure what constitutes a "display" if this is what was meant by the term "flourish" then ok, but, if it is a term that in someway means something else other than flourish...

On stage I perform about 5 mins. with silver dollars. Using vanishes, productions, flourishes (and perhaps displays) and techniques from Downs, Shaw, Slydini and Chavez. All inspired, and most of which was taught to me, by Cellini.

On the street, I do the steeplechase with 6 coins (3 on ea. hand) and a single coin routine that has served me well for the last ten years.

Stage, Parlor, Street and Close-up, few things that we as magicians use are as versatile those magical pieces of eight.
