My favorites are my baby brown hornet, parapad, and the pitata memo pad.
I used to use Riggs notebooks a lot but they’ve been giving bad impressions on the last few I’ve bought.
I like having a couple of different writing implements I can choose between on each of these

LCD writing tablet!
Using a ball point pen (Not the "pen" that comes with it.) the "impression" is actually created by the LCD screen. With a touch of a button the image disappears.

Use a mini bulldog clip or two for holding a few sheets of paper to the board.
Have the top sheet that your "Alyson" will write on be a bit longer than the pages beneath so that when they place their fingers to remove the page they are sure to only grab the top page.
Also place the top sheet so that it will easily release from the bulldog clips.
Take the board back, get your peak and press the button to vanish the image.
