The is a great topic. Myself, I can without looking feel about how many I have in back palm. Perhaps you could practice holding various quantities of cards in back palm just to get to know how various amounts feel. Another way of avoiding the problem, is practicing dropping the same/as close as you can amounts of card every time you do a split fan. This is difficult, but with practice you'll never run out of cards, because your always left with the same amount. However, if somehow you're still low because cards stuck together and fell or whatever, I would simply produce everything you have left in a fan.(the fan size depending on how many cards you have left) Then, either take a longer bow than usual, or simply accept applause until your music reaches the next point which you can continue from.
