Make a sick man a poultice and if he gets better, you're a rural apothecary. If he dies, you're a witch. Either way, they wouldn't let two witches marry. It was all very Republican. I actually do an effect based on the above. It does teach the arbitraryness of intolerance and is an angle you may wish to consider.

Why not the ghost,of a former Witch? You could have back story to go into history of witch.
