I just finished making some turkey gravy from the leftover turkey stock from Thanksgiving - I make really good gravy - and I got to wondering what would go into a good gravy for vegans.
Turkey gravy's pretty simple: fat (I used butter this time, but usually use the fat from the stock or bird), flour, turkey stock, salt, pepper, and heavy cream. For vegan gravy you could use vegetable stock in place of the turkey stock, but what would be appropriate for the fat? I think olive oil might be too strong, but maybe not. Canola or safflower oil, perhaps? And what about the cream (which you don't really need for the turkey gravy, but it makes it so much richer)? I know that you can get soy milk; is there such a thing as soy cream? Or something similar? |
