I saw one ventriloquist I enjoyed a lot, where instead of a puppet he trained dogs to open and close their mouth when he squeezed their neck. This is more out of curiosity, but does anyone know how he did this? And was it original, or is that a common thing?

The dog is wearing some type of mask with a moving mouth. The late British vent Albert Saveen was famous for doing this. Here's a brief clip of Saveen:
