I know that if I work in the States, there is all sorts of paperwork and permits etc.
I have even heard of folks questioned at the border when going to conventions - being asked if they are being paid to perform. What about a gig where the client is from Vancouver BC, but the gig takes place in the states? It is a church from here having a retreat there. The client paying me is from Canada, but the gig happens to be in the states. Would that be a problem?

As long as a Canadian Company is paying you, no matter where you are performing, it is NOT a problem for you. Only if you are getting paid my the US arm of the Company does it become more complicated.
