I'm interested as to whether the book "Chan Canasta - A Remarkable Man Volume 1" by David Britland has the 2 unseen cards in spectators pocket routine taught in it. If anyone has the book I'd be keen to know as I am thinking of investing in it.

Yes, there are two versions of the Cards to Pocket very briefly talked about on page 91 and 92.
The standard version which among others Osterlind teaches in MM (with no reference to Canasta) and the version shown in your clip above, with two decks in play. There are no explanation as such, but the reader will understand how the effects are done.
