I've updated my reference guide to Color Changing Knives routines here: https://magicref.net/magref/magknife.htm
This article lists the many books, magazine entries, videos and products that have (had) routines for the color changing knives. The main area that was updates was an expansion of the magazine section.

More recent high quality knives have included the Joe Mogar Knives, David Regal's recent set, Dan & Dave Buck had a set of Buck Knives (though I think these are now discontinued), TCC Presents has a new set (shipped from China), and Rodger Lovins knives I think are still available, and I love the Casavalle knives, but I'm not sure where/if they are available in the USA.

Also, just as an update, my magic book table of contents pages are still alive (https://magicref.net/magicbooks/index.htm), but entries are a lot slower in coming these days due to lack of time!

Oh, and I forgot to mention Meir Yedid's magic carries knives by Terry Broshear - these appear on the larger size, but the squarish design should make handling easier. May be a good choice for visibility to a larger audience and if your hands are larger.

I have never owned any colour changing knives. Can they actually be used as knives?

The Terry Broshear knives that Meir Yedid carries are real knives. If you need to use the blade, you only need to open it.
There are other CCK sets that the blade is not blade steel nor sharp.
