Whether they crack or warp is up to the skill of the shell designer.
Tom Bartlet designed the now scarce as hens teeth "Deacon Dan" shells from natural (read "real") black walnut shells, but he also puts a sculpted and cured putty on the inside of each shell which offers rock hard stability for decades, if not centuries. Tom's shells were anything but inexpensive to purchase, as Tom had to make each individual shell entirely by hand in a laborious process of fine grinding, and then finishing the inside with the cured and highly stable putty. Tom perhaps made a few dozen sets in total, each made exactly as "Deacon Dan" had taught him to make them. That the Deacon Dan shells are actual black walnuts is immediately apparent to the viewer, and somehow seems far less a "trick" than when using a contrived synthetic shell, or (for example) something like my SFS Sterling Silver Shells.

There is something about using a real shell over resin.

Every set of real shells that ive seen and felt pretty much didn't feel "real" anymore after its been sanded filled and coated several times...I mean it looks beautiful and handcrafted, but not as natural after the process... I personally changed my views on real shells after getting my first set from AL...I ended up getting a resin set and I'm extremely happy with the weight and feel...from now on, ill stick to the "well made" resin sets...

I use real English walnut shells that I bought at my local super market at Christmas time. I enlarged the natural dip in the back and coated the insides with wood glue and they have held up for several years with no issues. The middle of the three shells where the pea begins is slightly different from the other two. I tell the spectators that it is to give them the illusion that they can win.
