Mechanically: dice box, "loaded dice," sleight of hand.

Mathematically: opposite sides of a die add up to seven.

If you want a one, use the fact that most people don't know whats on the opposite side of a die roll.

If they roll a:

1 - you are done
2 - multiply the value by 2 & subtract from whatever is on the bottom (always 5)
3 - subtract from the bottom (4)
4 - subtract the value on the bottom (3)
5 - double the bottom number and subtract
6 - use the bottom value "which no one knows" (1)

in all cases except a roll of 1 it is more *mysterious* because no one knows what value might be under the die. They can even hide it from you if it works better.

I like Junkdz ideas above. However, I can offer this dodge which seems to mask the 'always 7' ruse:

If they shake a die and then hold it between finger and thumb (covering any two opposite faces) the sum of the four remaining faces will always be 14!

the patter I use for this is "just so you don't think the dice are loaded, shake in your hands, then grab two sides of the die with your two fingers..then add the remaining sides..."

What about "The Clairvoyant Die" from Henning Nelms' book Magic and Showmanship?
Use the value of the card as your forced number. This may or may not suit your purpose.

I have one effect where I have to force a '3', and I do it with fingers. They hold out 1-5 fingers of their choice, and I hold out 2. Here's the math I use to get '3' every time:
If they hold out...
1...2+1=3
2...it's a tie! Do-over.
3...3>2.
4...(4+2)/2=3, i.e. 3 is the 'average'
5...5-2=3
I'm sure you could figure out a similar set of logic for you and your spectator each rolling a die, if your die is loaded.

You can buy gimmicked die missing one number. e.g. instead of a 3, the die has two 4s. Because they're on opposite sides, people rolling them and looking at the top number won't easily see them.

You then roll them to eliminate all of the doubles. i.e. 1 & 1, 2 & 2, 4 & 4, etc. This can best be done in some sort of gimmick like the one I bought on the internet to bounce roll dice. In this example, the only remaining combination is the 3 & 3 or #6.

There is a very funny youtube clip of this being performed on British Television for the Penn & Teller Fool Us program a few years ago. The guy smashes cell phones EXCEPT the correct one. Kind of a reverse bank-night trick. Penn correctly guesses the method.

I got my gimmicked die from a firm in the UK.
